Matchbaker® Romantic Tip: Passion Pancakes

     Hand write a short note and leave it next to your love’s breakfast plate telling him or her how much you love beginning the day together. Hand-written sentiments have been replaced by our fast information age, and we seldom make time for it (even when it only takes a minute.) The rare, handwritten note will tell your partner that you thought enough to take a pause to write it, and this will make it even more valuable to him/her and make them feel special. They will likely keep it for a very long time, if not, forever.

Ingredients
  1. 1 cup all-purpose flour
  2. 1½ Tbls cocoa powder
  3. 1 tsp baking powder
  4. ½ tsp salt
  5. 3 Tbls sugar
  6. 1 cup buttermilk
  7. 1 Tbls vinegar
  8. 1 egg
  9. 1 tsp vanilla
  10. 1 tsp red food coloring (or beet juice for a more natural/organic red coloring option)
  11. 1/4 cup fresh raspberries
Cream Cheese Glaze
  1. 3 oz cream cheese, softened
  2. 3 Tbls butter, softened
  3. 1 cup powdered sugar
  4. ½ tsp vanilla
  5. ⅓ cup milk
Instructions
  1. Preheat large pan to medium heat (don’t forget to grease with some cooking spray or low-fat oil).
  2. Mix the flour, cocoa powder, baking powder, salt & sugar (dry ingredients) together in a large bowl.
  3. In another bowl, mix the buttermilk, vinegar, egg and vanilla (wet ingredients) together completely. (Then add the food coloring (or beet juice) and watch your pancakes transform into a romantic start to the day.
  4. Pour the wet, buttermilk mixture ingredients into the bowl with the dry, flour mixture ingredients, and mix thoroughly.
  5. In an electric mixer bowl, (or if you don’t have a mixer, use a bowl & your wire whisk) prepare the cream cheese glaze by blending the cream cheese and butter together until fluffy. Approx. 2 min. Add sugar, vanilla and milk. Mix ingredients together until the desired consistency is achieved. Feel free to use more milk to thin out the glaze, if you wish. Set aside to drizzle over finished pancakes in step 7.
  6. Scoop about 1/4 cup of that luxurious, red velvety pancake mixture onto your pan and wait for tiny bubbles to appear on the top of the pancake’s surface (approx. 2 – 3 min.) and then flip your pancake for an additional 2 – 3 min.
  7. Arrange hot stack of pancakes on serving plate.
  8. Drizzle smooth and creamy glaze over the pancakes, and then garnish with fresh and juicy raspberries.

           Leave a single red rose on your honey's car seat before they go to work or run an errand. Not only will they still be flying high from this delectable and unique breakfast that you've prepared for them, but now their joy will be reinforced again --within the hour-- when they find another simple token of your affection.

Velvet Breakfast Bowl

Easy, beautiful, fast, scrumptious. Did we mention it was easy? Shhhh, they don't have to know that though.

Ingredients
  1. 1 cup fat free milk
  2. 1 cup flour
  3. 6 eggs
  4. ¼ cup butter, melted
  5. Dash of salt
  6. 1 teaspoon vanilla
  7. 1 teaspoon orange zest (or lemon zest)
Instructions
  1. Preheat oven to 400 degrees, and get ready to make your partner smile.
  2. Coat cups of muffin tin with cooking spray.
  3. Simply combine all ingredients into a blender, and blend until smooth.
  4. Pour batter into muffin tin cups until a little less than 1/2 full.
  5. Bake for approx. 13-15 min. (The breakfast bowls will be golden and puffy.)
  6. Breakfast bowls will sink into muffin tins once they cool and resemble a bowl shape then.
  7. Fill with your partner's favorite toppings.
  8. Sprinkle with powdered sugar (optional).
